The gastronomic wonder of Manhattan in Maraval

Aioli takes its name from the sauce associated with Provençal in southern France because proprietor chef John Aboud understands that fine dining originated in Old Europe and was perfected in the New World in North American cities. Aioli does not tamper with excellence established over centuries: the foie gras of Aioli is that of Paris. At Aioli, as it would be in Europe, the pasta is freshly made in-house using only the best inputs and the flavours are subtly enhanced with seasonings, not drowned in chadon beni. (Aioli, however, does use the freshest local herbs and spices.)

From the simple beauty of the all-glass entrance through the thoughtful elegance of the dining rooms to the beauty of the presentation of every dish on the plate, Aioli is fine dining, not at Trinidad’s, but at the world’s highest level.
