In seeking out recipes from chefs in Italy, we found particular inspiration from two families who shared generations’ worth of their secret recipes and culinary techniques. Along the southern coast, in Naples, the Rizzo family taught us the classic dishes they serve in their own homes today, such as lasagne, spaghetti Bolognese and seafood right off the docks! Bold flavours and fresh herbs are staples in the Rizzo home. In the northern Italian hills, the Pisoni family revealed their love for the finest meats and poultry. The rib-eye, veal and tender filet mignon were the most exquisite we’d ever seen – or tasted! The Pisonis shared with us their mastery of cooking with whole cream and hand-churned butter, sautéeing with fine white wines and reducing the big reds and ports to the smoothest, silkiest sauces we’d ever tasted. Clearly, our gratitude is owed to the Rizzo and Pisoni families. In honour of their Italian heritage, then – and in sincere appreciation of them allowing us into their lives – we are proud combine their surnames to bring you Rizzoni’s Ristorante Italiano.
